2015. Gotham Chocolates is launched to acclaim, crafting sustainable couverture bonbons in a corner of the Gotham kitchen.
The next year Chef Paprocki and Bret Csencsitz broke into the bean-to-bar movement, roasting and winnowing the world’s finest beans at Gotham. Now, the handcrafted confections include award-winning bonbons, bean-to-cup hot chocolate, and a collection of eleven artfully wrapped bars inspired by the city that started it all.
